Seems like everything is on the go now-a-days. Everything seems to be portable - even applications.
This site has a menu systems along with a few built in apps and also additional apps you can download that are designed to be run from a portable USB device. The idea is that you can keep a portable workspace that you can carry around with you on a USB flash drive. This includes office applications, photo editing, media players and even a few games. I've got most of what they have loaded on a 2GB flash drive with plenty of room to spare.

Another idea in portability is to make applications web-based. This is a web-based video editing suite that also allows multiple people to work together on a project. This is pretty cool if you want to put together a music video or something and you need help from someone else.
